greek quinoa salad

You'll Need:
  • 1/2 c uncooked quinoa
  • 1 c water
  • 1/2 c chopped tomatoes
  • 1/2 c shredded fresh spinach
  • 1/3 c finely chopped red onion
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 ripe avocado, cut into small chunks
  • 1/3 c crumbled feta cheese

Then, you just:
  1. Rinse quinoa (do this step or you'll regret big time... unrinsed quinoa tastes bitter and nasty). Combine with water in a small saucepan and bring to a boil. Reduce heat, cover and simmer for 15 minutes or until water is aborbed and quinoa is translucent.
  2. Add tomato, spinach and onion to quinoa and stir.
  3. In a small bowl, mix lemon juice, olive oil and sauce. Add to quinoa mixture and toss.
  4. Add in the avocado and feta.
