inside the cooler, week no. 9

A sunflower! Too wonderful. This week's bounty was plentiful and delicious. The shortest, fattest little eggplant I've ever seen, a bunch of red onions, yellow cucumbers, green beans, salad mix, zucchini, summer squash, basil and even a jar of spicy pickles. We brought those to a little gathering the night we got them and they were a huge hit. The zukes have been made into a delicious egg-y casserole and into carrot zucchini muffins, the green beans are on schedule for tonight with a lemon dill vinaigrette, the onions are being used almost daily and the cukes we've just sliced up to put in our water and in our gin :) A little basil, some diced onion, oil and vinegar on top of slices of fresh tomato... just perfect. Oh, and the zucchini also went into these "latkes". I put that in quotes, because I'm sure that making "latkes" from zucchini, carrots and beets is offensive to someone out there. They were really good though!


  1. Call those "latkes" fritters and you're covered. I've been up to my ears in zucchini, so I made zuke fritters with ricotta and they were DELISH!
